Q&T : Apple-Walnut Mosaic Coffee Cake

  1. Hello everyone, I made this cake in a pan and it was rather crumbly. Couldn't cut a decent slice for a photo! I think the amount of apples is too much for the batter. The second time round I made it into cupcakes and it worked better... Also do consider cutting down on the amount of apples.

  2. Hi, I've made the cake this morning, thanks to the tips from Mich, I've made these as cupcakes, half the recipe with some changes. Yes, I noticed the amount of apples are way too much. I only used 1 cup of finely chopped apples for half the recipe, 1/4 cup walnuts, 1/3 cup dried cranberries, brown sugar a scant 1/2 cup and use all plain flour at 1 cup. The cake turns out moist and quite nice. The first bite I thought I was biting into a banana cake! Later in the evening, my daughter told me it tastes like banana cake! Hahaha! Overall, nice moist cake. Give it a try and like Mich says, cut down on the apples! And half a recipe yields exactly 6 cupcakes (based on my ingredients adjustments above). And the dried cranberries adds a very nice taste to this cake. Have fun baking!

    1. My son just ate one and I asked him whether he knows what cake I made. He replied "Banana cupcake"! ???? hahaha!
      Mich, do you think this cake tastes like banana cake? My family thinks so, including me! :)

  3. Hi Joyce, now that you mentioned it, if not for the apples and spices, it does have the moist texture of a banana cake! I enjoyed it because a few days later, its still as moist as ever even after I heated in the oven :)

  4. I've baked this cake yesterday & we LOVE it! Lovely moist tangy cake & the addition of cranberries was amazing. Ya, I greed that it's just a bit crumbly. I've made half the recipe too & in mini cakes. I'm making this cake for Christmas gathering. :)

  5. Hi ladies,

    I remembered that Mich has mentioned to me that this cake is going to be very crumbly. I wanted to bake this into mini cakes but choose to take the risk to seek for a nice "mosaic" design. And, I baked half the amount (with no reduction in apple used) in a 20cm loaf tin and it works! Slicing it can be tricky but it works! Every slice of my cake did has a nice mosaic design :D
